For a few days at Eatopi, the people scooping your ice cream were the people who started the company. Mama Booza rolled a cart into the Dubai restaurant and the founders got behind it themselves, serving every scoop, chatting to customers and watching first reactions land in real time.

If you have not been, Eatopi is worth understanding. It is a restaurant concept by Kitopi, the UAE's largest homegrown hospitality company, that brings signature dishes from the country's most iconic chefs and homegrown food brands together on one rotating menu. Nothing stays put.
