Ashta is the foundation of Levantine pastry. Thick, slow-made clotted cream, skimmed from the surface of gently simmered milk, floral with orange blossom, delicately sweet.

It has been spooned over knafeh, layered into mafroukeh, and eaten simply with honey at breakfast for centuries. Every great Arab dessert leads back to it.

We churned it slowly into ice cream. Rich without being heavy. Fragrant without being perfumed. The purest thing we make.

I did not expect much because most places make ashta taste like sweetened milk and nothing else. This one keeps the orange blossom in the background where it belongs. My mother tried it and asked where I bought it, which is the highest review you will get out of her.

Simple flavour, very hard to get right, and they got it right.

There is no trick to this one. It is cream, blossom water and the pistachio on top, and if any part of it is off you notice straight away. Nothing is off. I have been buying it most weeks since March.

A little too sweet for me, but I keep going back.

My only note is that I would drop the sugar slightly and let the milk do more of the work. Other than that it is the closest thing to proper ashta I have found in a supermarket freezer. The texture is thick, almost chewy, which I mean as a compliment.

Put it next to a plate of dates and you have a whole dessert.

Served it after dinner and my guests assumed I had made it myself. I did not correct them. Works better after a heavy meal than anything chocolate does.
