Expecting something bright green and overly sweet? This is the opposite. Muted, rich, and genuinely nutty, the way pistachio is supposed to taste, with a roasted depth that lingers long after the last spoonful.

The pistachio tree has been cultivated in the Middle East for over 9,000 years. In Persian and Levantine tradition, it is the nut of hospitality, served at weddings, celebrations, and as a mark of generosity.

Most pistachio ice cream is bright green and artificially flavoured. Ours is not. Real pistachios have a muted, earthy green and a flavour that is nutty, slightly sweet, and complex.

We slow-roast ours to draw out their natural oils. No shortcuts. No artificial colour.

You can tell immediately that nobody added green dye. It has that slightly savoury edge real pistachio has, and the whole nuts on top are not decoration, they actually taste roasted. My father is difficult about pistachio and he had two bowls.
