Never had halawa? Think sesame snaps, richer, softer, with a darkness like bittersweet chocolate and a caramel pull underneath. Sweet upfront, then a dark molasses warmth, then the nuttiness of sesame, with chunks of real pistachio halawa breaking up the cream.

Long before sugar was refined, the Shuf mountains south of Beirut were thick with carob trees, their dark pods harvested by hand and slow-cooked into Dibs el Kharrub, a molasses so prized it was given as a wedding gift.

Halawa, meaning simply "sweet" in Arabic, is older still. Its first written recipe appeared in the 13th-century Arabic cookbook Kitab al-Tabikh. For centuries it sustained Levantine families through Lent, Ramadan, and long winters.

We took these two ancient ingredients and asked: what would happen if you froze them together?

Whoever came up with this deserves a raise.

I was ready to hate it. Dibs and tahini in ice cream sounded like something invented for a food blogger. It works. The halva crumble on top gives it that slight sandy texture and the molasses keeps it from going flat. I have bought it four times now.

Very rich, a small bowl is enough.

A word of warning, this is not a flavour you can eat a lot of in one sitting. It coats your mouth the way tahini does. Two small scoops and I am done, which means the tub lasts, so I suppose that is value.

The molasses is the whole thing.

Without the dibs running through it this would be a sesame ice cream and slightly boring. With it, it works. The halva crumble on top is generous and does not go soft.
