Most chocolate ice cream is made with cocoa powder and sugar. It tastes like it. Ours is made with single-origin dark chocolate, selected for its complexity, its bitterness, and its finish.

Good dark chocolate is bitter at first, then warm, then lingering. It has notes, depth, in the same way wine does. We didn't want to hide that. We wanted to freeze it.

Most chocolate ice cream in the supermarket is basically brown sugar. This is closer to eating a good bar that someone left out too long. My wife thinks it is too intense, so I get the tub to myself, which suits me.

Not proud of it. It is dense enough that you cannot rush it, so a small bowl actually does the job. The chunks inside stay soft instead of turning into those hard shards you get in cheaper tubs.

I understand what they are going for and most people seem to love it. For me it sits just on the wrong side of bitter, and I ended up adding caramel sauce, which probably defeats the point. The quality is obviously there.

I had to throw the rest of the old tub out because it tasted like nothing afterwards. It melts slowly too, which tells you there is not much air pumped into it.
